Cobia

Cobia are odd-looking fish that pack a punch. They resemble small sharks, with a broad, flat head and dark brown coloring. Most run 20-40 pounds, but they can reach over 100. Cobia love structure, so we find them around buoys, wrecks, and oil rigs. Look for cobia in 30-70 feet of water during spring and summer. They often cruise just under the surface, so keep your eyes peeled. Cobia are curious and will swim right up to the boat sometimes. Anglers target cobia for their strong fights and excellent meat. They make powerful runs and can be stubborn to land. The firm white flesh is delicious grilled or blackened. My favorite cobia technique is sight fishing with live eels or big jigs. When you spot one, cast well ahead of it and let the bait sink. Cobia will usually investigate, but be ready - when they decide to eat, they hit hard and fast. Set the hook and hold on for a battle.

Gag grouper are ambush predators that love structure. They average 10-30 pounds but can reach over 80. Look for them around reefs, ledges, and wrecks in 60-250 feet of water. These fish are masters of camouflage, changing colors to blend in with their surroundings. Winter is prime gag season as they move to shallower waters to spawn. They're aggressive feeders, hitting both live and dead baits hard. Anglers prize gags for their firm, white meat and the challenge of pulling them out of their rocky lairs. They fight dirty, diving for cover as soon as they're hooked. My go-to gag grouper technique is to use heavy tackle and a fish finder rig. Drop a live pinfish or big chunk of squid right into the structure. When a gag hits, lock down the drag and crank hard to pull them away from the rocks. It's a true tug-of-war that'll test your arms and your gear.

Mahi Mahi or Common Dolphinfish

Mahi Mahi are colorful fighters that'll give you a run for your money. These fish average 15-30 pounds but can reach up to 80. Mahi love the open ocean, usually hanging out in the top 100 feet of water. We often find them within 25 miles of shore here in Panama City. Spring and fall are prime seasons when the water warms up. Anglers prize Mahi for their delicious white meat and the challenge of landing one. They put up a great fight and look spectacular with their electric blue and gold colors. My go-to trick is trolling with rigged ballyhoo or squid. Mahi can't resist a bait skipping across the surface. When you hook one, keep tension on the line - these fish will leap and shake trying to throw the hook. Stay patient and you'll get that picture-perfect catch in the boat.

Anglers target these fish for their firm, white, sweet-tasting meat. They also pull hard for their size, especially when you're trying to pull them away from structure. My top red snapper tip is to use heavy tackle and get them off the bottom fast. Drop your bait down with a fish finder rig. When you feel the bite, reel quick and steady to pull them away from their rocky homes. Fresh cut bait like cigar minnows works great, but for big ones, try a live pinfish.

These solitary predators hang around deep water structures like reefs and oil rigs. We usually target wahoo 20-30 miles offshore in waters 100-300 feet deep. Fall and winter are prime seasons when they move closer to shore. Wahoo put up an incredible fight, making blistering runs that'll smoke your reel. Anglers love wahoo for their speed, power, and excellent table fare. The meat is firm and delicious - perfect for grilling or sashimi. My top wahoo tip is high-speed trolling at 12-15 knots. Use wire leaders to prevent bite-offs from their razor sharp teeth. Rig up some diving plugs or skirted lures and hang on tight when one strikes.
